Beans are a staple in Mexican cuisine, they can be used in so many ways.

In a large pot, place beans and add water to completely cover them. Soak beans overnight.
Discard water and add 8 cups of fresh water, ½ onion, 2 garlic cloves and 1 Tbs salt. Bring beans to a simmer, cover and let cook until tender, about 1 ½ hours over low heat.
Heat a large pan and add oil. Sauté the chopped onion and cook until translucent, about 7 mins, add minced garlic and fry until fragrant, around 30 sec.
Add the beans with their liquid and the salsa.
Use a potato masher or immersion blender to mash the beans into a coarse puree.
Simmer to allow the flavours to come together, about 10 minutes. Season with salt and extra salsa. Enjoy!!
