These nachos completely meet the above requirements, they are so versatile and can be ensemble quite quickly.
Ingredients
2Mi Cocina Corn Chips
3cupsShredded Mozerella Cheese
1cupSliced black olives
¼cupGreen onions (green part)
2cupsDiced tomatoes
1Mi Cocina Salsa - Medium Chipotle
Note:
As I mentioned, Nachos are versatile, here some ideas of extra toppings:
Sliced avocado or guacamole
Black beans
Prepared ground beef, roasted chicken or pulled pork
Roasted vegetables
Corn niblets
Pico de gallo
Cooking Instructions

Preheat over to 375°F

Spread evenly one bag of Mi Cocina corn chips on a rectangular deep baking dish.

Sprinkle 1 ½ cups of mozzarella cheese on top of the corn chips.

Evenly, layer the second bag of corn chips.

Sprinkle the remaining 1 ½ cups of mozzarella cheese.

Bake until the cheese is melty, approximately 20 mins.

Take out of the oven and add the green onions, tomatoes and black olives.

Serve with Mi Cocina’s Salsa Medium Chipotle or any of MI Cocina’a salsa of your choice.
