Choriqueso
This is a traditional Mexican dish, in its basic version, with loads of melted cheese and chorizo sausage.
In a medium pot, place chicken breasts, halved onion, 3 whole garlic cloves and 1 tbs of salt.
Add water to cover and bring to a boil; simmer for 30 to 40 mins until chicken is completely cooked.
Remove chicken from the broth and let it cool until you can manipulate it with your hands.
Shred chicken with your hands or using two forks. Reserve.
Strain broth and reserve.
Heat oil in a pan, add sliced onions and sauté for 7 mins, add minced garlic until fragrant.
Add shredded chicken, a jar of salsa and 2 cups of reserved broth.
Mix well, cover and let it simmer for 10 minutes. Enjoy!
