CHICKEN TINGA
(TINGA DE POLLO)

Chicken tinga is a dish made with shredded chicken, sliced onions and a tomato-chipotle sauce.

It can be used to make different additional dishes.

Ingredients

 1 lb Chicken breast
 3 Large white onions, 2 sliced, 1 halved
 6 Garlic cloves
 4 tbsp Vegetable oil
 1 Jar of Mi Cocina Salsa Chipotle (medium or hot, your choice!)
 Salt and pepper to taste

Note:

  • Serve with a side of refried beans or rice.
  • Use as a filling for burritos, tacos, or quesadillas.
  • You can add it to a tostada to make tinga tostadas.

Cooking Instructions

In a medium pot, place chicken breasts, halved onion, 3 whole garlic cloves and 1 tbs of salt.

Add water to cover and bring to a boil; simmer for 30 to 40 mins until chicken is completely cooked.

Remove chicken from the broth and let it cool until you can manipulate it with your hands.

Shred chicken with your hands or using two forks. Reserve.

Strain broth and reserve.

Heat oil in a pan, add sliced onions and sauté for 7 mins, add minced garlic until fragrant.

Add shredded chicken, a jar of salsa and 2 cups of reserved broth.

Mix well, cover and let it simmer for 10 minutes. Enjoy!
