Shrimp in Mango Chipotle Sauce

This dish takes little preparation and packs in lots of rich flavours. Serve it with rice and you’ll have the perfect summer meal!

Ingredients

 1 small onion, sliced thinly
 1 garlic clove, minced finely
 4 slices of bacon, cut into small pieces
 2 lbs shrimp, shelled and deveined
 1 cup Mi Cocina’s Mango Chipotle
 2 tbsp olive oil (optional)
 1 avocado, sliced
 A handful of chives, chopped
 1 lime, cut into small wedges
 salt and pepper to taste

Note:

Serve it with rice and you’ll have the perfect meal!

Cooking Instructions

In a medium saucepan, fry the bacon over medium heat until cooked but still soft.

Add onions and garlic and cook for 2 minutes.

Add the shrimp and cook for 3 minutes. (If you’d like a richer-tasting dish, add 2 tablespoons of olive oil).

Reduce the heat to low. Add the Mango Chipotle Salsa and simmer for 10 minutes. (If the mixture is too thick, add water as needed).

Season with salt and pepper.

Garnish with avocado and chives.

Serve with rice and lime wedges. Enjoy!
