Most of the time it’s served for breakfast, however, you can enjoy it at any mealtime.

Chilaquiles Verdes is a traditional Mexican dish made with corn tortilla chips simmered in a sauce and topped with sour cream, queso fresco and sliced onions.

Ingredients

 1 Bag of Mi Cocina corn chips
 3 Jars of Mi Cocina Salsa Verde
 1 cup Chicken or vegetable broth
 1 tbsp Vegetable oil
 1 cup Sour cream
 1 cup Queso fresco or feta cheese
 ½ cup Sliced onion
 Salt to taste

Tips:

  • Serve it with sunny side eggs and a side of refried beans.
  • Use the above toppings plus shredded chicken

Cooking Instructions

Heat oil in a medium pan.

Add salsa and broth and let simmer for 5 mins. Taste and adjust with salt and pepper.

Add a handful of corn chips into the sauce to cover them, with a slotted spoon remove the corn chips and serve on a plate.

Top the corn chips with sour cream, cheese, and slices of onion.
